What sets Tatsuya's Tsukudani (Soy-Braised Beef) apart is its satisfying meatiness. We use Kobe Beef round meat — the same quality we use for yakiniku — cut thick and slowly simmered, giving every piece a remarkably rich texture.
Our craftsmen examine the grain of each piece, slicing firmer sections a bit thinner and tender sections thicker. The result is a dish with both substantial thickness and melt-in-your-mouth tenderness.
Made with carefully selected seasonings — soy sauce, sugar, and rice syrup — simmered until sweet, savory, and fork-tender. A touch of ginger brings out the best of the tsukudani flavor. Excess fat is carefully removed for a clean finish, making this a treat everyone can enjoy.

What truly stands out is the juiciness. Using a special technique, we return the umami-rich cooking broth back into the meat, so when you bite in, rich meat juices flow out beautifully. Conventional practice calls for reducing moisture to extend shelf life — but we chose to pursue the best possible flavor instead.
Enjoy it over steamed rice, as a side with drinks, as our recommended "Tsukudani Ochazuke" (poured over rice with tea), or simply toss it into udon for an instant upgrade to a luxurious meat udon.

While refrigeration is recommended, the aluminum pouch packaging means short periods at room temperature are not a problem. (For longer periods, please use a cold pack.)
What is the difference between Tsukudani and Shigure-ni?
Tsukudani: Round meat seasoned with ginger
The standout feature is its meatiness. Thick-cut Kobe Beef round meat (yakiniku grade) is slowly simmered until the fibers become tender, while preserving a satisfying, meaty bite.
Seasoned with carefully selected soy sauce, sugar, and rice syrup, and finished with a ginger accent.
Shigure-ni (Ginger Soy Beef): Sliced beef seasoned with sansho pepper
Made with sukiyaki-grade slices from various cuts including loin, belly, and round. Fragrant, subtly spicy whole sansho pepper brings out the distinctive sweetness of Kobe Beef fat.
The thinly sliced meat is simmered until meltingly tender, making it an outstanding topping for rice.
