Miso-zuke, which is marinated in white miso and has a deep, nutritious flavor, was created through trial and error in order to keep the meat as long as possible when the restaurant was founded, when there were no refrigerators. It can be carried at room temperature.
Tsukudani and shigureni, which are made by slowly simmering meat without adding water, are traditional flavors that have been made in our family for generations. And it is also a taste of memories for me, which was always included in my lunch box when I was young. The broth seeps into rice balls and tamagoyaki, and is very delicious. Please enjoy the old-fashioned taste filled with the wisdom of our predecessors.
