I eat meat just about every day, but sukiyaki has always been my all-time favorite. It's a dish where the quality of the meat shines through completely — there's nowhere to hide. Growing up, whenever we visited family in the countryside, we'd always bring our beef along as a gift.
The key is to sear the meat well right at the start. Keep the seasoning simple: just soy sauce, sugar, and sake. And whatever you do, don't add water! Adjust the flavors to your own taste and enjoy every bite. Personally, I like mine on the sweeter side with a generous helping of sugar.
