The word "sukiyaki" traces back to "sukiyaki" (plow-grilling)
The name "sukiyaki" dates back to the Edo period, when people would heat a farming plow (suki) over a fire and grill fish and tofu on it. Before the Meiji era, eating meat was uncommon, so the prevailing theory is that grilling meat outdoors on a plow gave rise to the name we use today.
The key to great sukiyaki is searing the meat first

As sukiyaki spread to the Kanto region, the cooking style shifted toward simmering in a rich soy sauce-based broth called warishita. Even today, Kanto-style sukiyaki resembles a simmered beef hot pot.
In contrast, Kansai-style sukiyaki stays true to the original method — searing the meat first, then seasoning with sugar, soy sauce, and sake. At Tatsuya, we recommend searing first. This brings out a wonderful caramelized aroma that makes each bite even more satisfying.

Rather than using a premixed broth, season to your own taste. Sear the meat first, then add sugar, followed by soy sauce, then sake. After adding your vegetables, adjust the flavor — add sugar if too salty, sake if too strong, soy sauce if too sweet.

Sake
Kikuchi Sake Brewery — Kurodasho -
A junmai (pure rice) sake named after Kurodasho, located upstream along the Kakogawa River in the Banshu region of Hyogo Prefecture — the birthplace of Yamada Nishiki, Japan's finest sake rice. Brewed by Kikuchi Sake Brewery, established in 1878, this sake offers a crisp finish with a broad, mellow richness.
Kurodasho is also the land where Tajima cattle — the source of Kobe Beef — are born and raised. Sake made from rice grown in the same terroir pairs beautifully with the beef. When adjusting the flavor of your sukiyaki, this sake adds a depth of umami that water simply cannot achieve.

Kadocho — Yuasa Soy Sauce -
From Kadocho, the oldest producer in the Yuasa soy sauce tradition with over 170 years of history. This dark soy sauce is naturally brewed over 12 to 18 months in Edo-era cedar barrels from Yoshino.
The natural flavor and gentle aroma are something mass-produced soy sauce can never replicate. Rich yet mild, it harmonizes perfectly with the delicate fat of Kobe Beef. Made without any preservatives or artificial seasonings — a living soy sauce.

The finest sugar from Mitani Seito Hane Sanuki Honpo, a family operation that has preserved traditional methods across eight generations since its founding in 1804.

The beef is, naturally, Kobe Beef from our shop, Kobe Motomachi Tatsuya. From Tajima cattle raised in Hyogo Prefecture, only those with the finest meat quality earn the title "Kobe Beef." Our skilled craftsmen further select and hand-slice the perfect cuts for sukiyaki.
The melt-on-the-tongue texture from fine marbling and the clean, refined fat are hallmarks of Kobe Beef alone. Sear the meat first and the rich, intoxicating aroma will be impossible to resist.

Packaging & presentation
The meat is placed in a wooden box and wrapped (noshi gift tags are applied here), then nestled with a cold pack inside a presentation box. The seasonings are packed alongside in an original branded carton.
If you would like a carrying bag, we will include a furoshiki wrapping cloth (non-woven fabric).
