The origins of sukiyaki — a premium seasoning set

Enjoy authentic "sukiyaki" at home with a luxurious set featuring the finest sake, soy sauce, and sugar — ingredients worthy of sukiyaki's earliest days — paired with Tatsuya's Kobe Beef. Selected as a 5th Kobe Selection award product.

The word "sukiyaki" traces back to "sukiyaki" (plow-grilling)

The name "sukiyaki" dates back to the Edo period, when people would heat a farming plow (suki) over a fire and grill fish and tofu on it. Before the Meiji era, eating meat was uncommon, so the prevailing theory is that grilling meat outdoors on a plow gave rise to the name we use today.

The key to great sukiyaki is searing the meat first

As sukiyaki spread to the Kanto region, the cooking style shifted toward simmering in a rich soy sauce-based broth called warishita. Even today, Kanto-style sukiyaki resembles a simmered beef hot pot.

In contrast, Kansai-style sukiyaki stays true to the original method — searing the meat first, then seasoning with sugar, soy sauce, and sake. At Tatsuya, we recommend searing first. This brings out a wonderful caramelized aroma that makes each bite even more satisfying.

Craft your perfect sukiyaki with the finest ingredients

Rather than using a premixed broth, season to your own taste. Sear the meat first, then add sugar, followed by soy sauce, then sake. After adding your vegetables, adjust the flavor — add sugar if too salty, sake if too strong, soy sauce if too sweet.

For this "Kobe Beef Sukiyaki" set, Tatsuya has assembled the finest sugar, soy sauce, and sake available — the very best that could be imagined from the era when sukiyaki was born. Each ingredient was personally selected by our owner as the ideal complement to Kobe Beef.

Sake
Kikuchi Sake Brewery — Kurodasho

A junmai (pure rice) sake named after Kurodasho, located upstream along the Kakogawa River in the Banshu region of Hyogo Prefecture — the birthplace of Yamada Nishiki, Japan's finest sake rice. Brewed by Kikuchi Sake Brewery, established in 1878, this sake offers a crisp finish with a broad, mellow richness.

Kurodasho is also the land where Tajima cattle — the source of Kobe Beef — are born and raised. Sake made from rice grown in the same terroir pairs beautifully with the beef. When adjusting the flavor of your sukiyaki, this sake adds a depth of umami that water simply cannot achieve.

Soy Sauce
Kadocho — Yuasa Soy Sauce

From Kadocho, the oldest producer in the Yuasa soy sauce tradition with over 170 years of history. This dark soy sauce is naturally brewed over 12 to 18 months in Edo-era cedar barrels from Yoshino.

The natural flavor and gentle aroma are something mass-produced soy sauce can never replicate. Rich yet mild, it harmonizes perfectly with the delicate fat of Kobe Beef. Made without any preservatives or artificial seasonings — a living soy sauce.

Sugar
Mitani Seito
Sanuki Wasanbon Sugar

The finest sugar from Mitani Seito Hane Sanuki Honpo, a family operation that has preserved traditional methods across eight generations since its founding in 1804.

Wasanbon is handcrafted with great care, retaining its natural nutrients. With a clean, refined sweetness and remarkably smooth texture, we tried many sugars before finding the one that works. Wasanbon is the only sugar that complements — rather than competes with — the natural sweetness of Kobe Beef fat, creating a beautiful harmony and forming the perfect flavor foundation.

Beef
Kobe Motomachi Tatsuya
Kobe Beef

The beef is, naturally, Kobe Beef from our shop, Kobe Motomachi Tatsuya. From Tajima cattle raised in Hyogo Prefecture, only those with the finest meat quality earn the title "Kobe Beef." Our skilled craftsmen further select and hand-slice the perfect cuts for sukiyaki.

The melt-on-the-tongue texture from fine marbling and the clean, refined fat are hallmarks of Kobe Beef alone. Sear the meat first and the rich, intoxicating aroma will be impossible to resist.

Choose from two types of meat

Bisai (Finely Marbled) — For those who love lean beef

Features Top Blade from Kobe Beef — a lean cut with beautifully fine marbling throughout. While delivering the robust "true meat flavor" that only lean beef provides, the delicate marbling brings exceptional balance. Enjoy a tenderness you wouldn't expect from lean beef, along with pure, deep umami.

Hojun (Rich & Luxurious) — A melt-in-your-mouth indulgence

Features our finest loin with breathtakingly beautiful, art-like marbling. The most tender of all our sukiyaki cuts — so soft it practically melts on your tongue. The sweet, rich aroma that fills the air the moment you sear the meat is nothing short of extraordinary.

Includes an original booklet — perfect for gifting

Each set comes with Tatsuya's original sukiyaki booklet, created exclusively for the "Kobe Beef Sukiyaki" set. Featuring the history of sukiyaki, details of each included item, and an easy-to-follow recipe, this set makes a wonderful gift — even for someone preparing sukiyaki for the first time.

Anyone can easily prepare sukiyaki tailored to their own taste.

Perfect as a Gift!

I sent a Kobe beef and seasonings set to family members who live far away. The deciding factor was that the set includes top-quality seasonings specifically selected to complement the finest Kobe beef.

The Finest Beef

We enjoyed it as sukiyaki.
The meat, sugar, soy sauce, and sake were all premium quality — it was truly the finest sukiyaki I've ever had.
Our family of three couldn't finish all the meat in one sitting, so we had the leftover sukiyaki meat the next day as well. It was still wonderfully tender and delicious.

I sent this as a gift to relatives living in the Kanto area.
They said, "It was delicious! Kobe beef really is something special!"
I hope to order some for myself one day.

A First-Time Experience

The set came with meat, soy sauce, sake, and wasanbon sugar, and I made sukiyaki following the included instructions. I've never had sukiyaki that I could eat so quickly and eagerly. The light, refined sweetness made it incredibly delicious, so I ended up sending it as a gift to my family as well.

Top-Quality Meat and Seasonings — Fully Satisfied!

I was looking for sukiyaki meat and became interested in the seasonings too, so I placed an order. The meat was so tender — completely different from the imported beef I usually buy at the supermarket. The soy sauce was rich, and the wasanbon sugar had a gentle sweetness. I've been using the leftover seasonings in other dishes and enjoying them for a long time.

Ideal for Gift-Giving!

Tatsuya is a shop my parents would turn to for special occasions ever since I was a child. Because I know firsthand how delicious it is, I chose it this time as a housewarming gift for someone very important to us. Their whole family enjoyed it together, and they were so happy to have such a treat during the pandemic! It was for a senior colleague of my husband's, and not only was the recipient delighted, but my husband was also very pleased. Choosing Tatsuya was definitely the right call!
