You can certainly cut these into steaks or BBQ portions, but my top recommendation is to roast the whole block into a beautiful roast beef. In our family, homemade roast beef is an absolute must for New Year's celebrations.

There are many ways to prepare it, and you'll be surprised how easy it is to get great results. (See our roast beef recipe for details.) Even if the surface gets a little charred, don't worry — that's not a failure at all!

[Brisket]
Also known as shoulder brisket, this cut is ideal for slow-cooked dishes. Perfect for beef stew or curry. Sear the surface while still in a large piece, simmer it low and slow, then slice it to whatever size you like — you're in full control.
