Our Kobe Beef Croquettes are made with 100% Kobe beef -- every bit of meat is genuine Kobe. The cuts used are brisket (shoulder) and shank. The mince is coarsely ground to preserve a satisfying texture, and the fat that lends its gentle sweetness also comes exclusively from Kobe beef. We use a particularly rich and sweet type of fat called "kenne" (kidney fat).

Even in a Kobe Beef Croquette, the star ingredient is, of course, the potato. We use exclusively Hokkaido-grown potatoes. The cool summer nights in Hokkaido allow the potatoes to accumulate starch, and the large temperature difference between day and night makes the region ideal for producing exceptionally flavorful potatoes.

The croquettes are delivered frozen in their pre-fried state. Simply place them in the frying oil while still frozen.
