The tenderest lean cut, sliced for Yakiniku (Japanese BBQ).
This is one of the softest parts of the round. Though lean, it features fine, delicate marbling throughout, delivering both a robust beefy flavor and wonderful tenderness. A different kind of pleasure from heavily marbled cuts.
Our craftsmen carefully assess each block, identifying the firmer and softer areas, then hand-slice each piece at the ideal angle.
