This set pairs equal portions of lean, tender "Rump" with rich, juicy "Short Rib (Tri-Tip)" — often called the otoro of Yakiniku. The ideal choice when you want the best of both worlds. Also makes an excellent gift.
Our craftsmen carefully assess each block, identifying the firmer and softer areas, then hand-slice each piece at the ideal angle.
Rump
At first glance, the marbling looks modest — but look closer and you will find incredibly fine veins of fat woven into the muscle fibers, giving this cut a surprisingly tender bite. Unlike loin cuts, this is a cut for savoring the pure taste of the beef itself.
Supreme Short Rib
They say the flavor of wagyu is defined by its fat. Kobe Beef fat has such a low melting point that it practically melts at room temperature. The Short Rib, loaded with premium fat, is a masterpiece that melts the moment it touches your tongue. Despite the rich flavor, the high quality of Kobe Beef fat means it sits easy on the stomach.
The finest beef deserves the simplest seasoning — start with salt and pepper.
Whether you like it light with ponzu or prefer a classic BBQ dipping sauce, we are sure you will be delighted. But for that very first bite, try just salt and pepper. Let the natural sweetness of the beef shine through.
