Great beef makes great tendon.
The rich umami of Kobe Beef is concentrated in every piece. Raised on high-quality feed, Kobe Beef tendon is also notable for producing remarkably little scum during cooking.
Beef tendon typically requires pre-boiling, but with Kobe Beef tendon, you may not even need that step depending on your preference. (It will be a bit richer if you skip it.)
The tendon is also exceptionally tender, so cooking time is much shorter than with ordinary beef tendon.

Kobe Beef tendon releases so much umami and depth that it transforms everyday tendon dishes into something special.
Add it to oden, for example, and there is absolutely no gamey smell. The umami of Kobe Beef infuses the daikon radish, creating an extraordinary oden.
"Kobe Beef Tendon Curry" is another revelation — bursting with umami, it is astonishingly good. Our household favorite is "suji-konnyaku" — simply simmered with konjac. Dangerously easy to keep eating!
Other ideas: doteyaki, okonomiyaki, yakisoba, omelette, soup, yakiniku (tender pieces are great just grilled), red wine stew — the possibilities are as wide as your imagination.
Why Kobe Beef tendon is truly rare (and why we cannot accept delivery date requests)
Our tendon includes a mix of various cuts.
On average, producing 1 kg of tendon requires processing 10 kg of meat. When we portion steaks, yakiniku, and sukiyaki cuts from whole blocks, we trim away the firm sinew that would affect the texture. In other words, tendon is a byproduct of preparing our other products — we can only sell tendon at the rate our regular cuts sell.
Kobe Beef tendon is extremely popular among serious beef enthusiasts, and many buy it by the kilogram, which makes balancing supply with our regular products a real challenge. The 10:1 ratio simply cannot keep up.
For this reason, we did not offer tendon for some time. However, when we had the chance to secure a large supply and listed it here, demand far exceeded expectations! We had planned a limited-time sale, but decided to make it a regular offering — with the condition that delivery dates cannot be specified.
Depending on availability, we can deliver as soon as 1–2 days after ordering, or within 1–2 weeks at most.
