We dice shoulder brisket — ideal for slow-cooked dishes — along with round and other cuts left over from our steak and yakiniku production. Just by upgrading the meat, your curry becomes an entirely different dish.
A mix of premium cuts, including steak trimmings.
We use shoulder brisket, which is perfectly suited for braising, along with round and other cuts that were originally destined for steaks and yakiniku.
For example, when a customer orders a 200g steak, slightly over is fine — but if a block comes in at 180g, we cannot sell it as a steak. The beef that does not quite make the cut for steaks and yakiniku is diced and prepared as our curry meat.
