Our original Sliced Trimmings have always featured lean cuts like Belly, Round, and Loin. Now, we are excited to introduce "Marbled Sliced Trimmings," made from our more richly marbled cuts.

We use "Shoulder & Shoulder Misuji" — lean yet beautifully laced with fine marbling for tenderness — along with "Loin," where you can savor the sweet richness of the fat. Considerably more affordable than buying our regular marbled slices.

Sliced specifically as Sliced Trimmings — not leftover scraps.

Typically, "sliced trimmings" are just that — offcuts left over from trimming steaks and sliced meat into shape.

We used to sell those offcuts too, but as demand grew, we could never keep up with scraps alone. So we developed a different approach: we take our regular sukiyaki and shabu-shabu slices, focusing on marbled cuts, and cut them into half or third-size pieces.

In other words, our Sliced Trimmings are the same quality as our sukiyaki and shabu-shabu slices — just in smaller, varied sizes.

Customers love them not only for everyday meals, but also for casual gatherings with friends or a relaxed sukiyaki night at home.

Made the Most Amazing Nikujaga

I had heard that Kobe beef is incredibly delicious, so I ordered from Tatsuya and made sukiyaki. That time I used the home-use grade, and the sweetness and broth from the meat were amazing. So this time, I decided to try the sliced trimmings.
My nikujaga (meat and potato stew) turned out many times more flavorful than usual — it was so delicious that it made a perfect dish all on its own. The meat was too good for nikujaga, honestly — you'd never guess it was sliced trimmings.
It was a moment when I truly felt that the meat is the heart and soul of nikujaga.
