Green sauce for beef shabu-shabu by Higehisa

Ingredients (for 4 people)

・Parsley・・・20g: finely chopped ・Anchovy fillets・・・4 fillets: finely chopped ・1/2 clove of garlic: finely chopped ・Breadcrumbs・・・2 tablespoons: Sprinkle with white wine vinegar and squeeze lightly ・Beef slices (for shabu-shabu)... 240g
・Ciblets (Chinese chives can also be used)・・・1 bunch, cut into small pieces about 5 mm long ・White wine vinegar appropriate amount ・Virgin olive oil appropriate amount ・Salt, pepper, boiled vegetables

how to make

1. Put parsley, anchovies, garlic, and bread crumbs in a bowl, mix well, spread with virgin olive oil, and season with salt and pepper. (Add more vinegar if it's not sour enough.)

2. Boil water in a pot, season with salt, 'shabu-shabu' beef slices, and serve with boiled vegetables such as broccoli. Pour the green sauce over the top, sprinkle with the siblets, and drizzle with virgin olive oil.

*You can add various ingredients to the green sauce as you like. For example, capers, pickled cucumbers, onions, boiled egg yolks, fresh peppers, hawk's claws and basil.

It can be warm or cold. as you like.
