In general, shabu-shabu meat is cut thinner (because it's just a quick dip in hot water) because the meat shouldn't be tough. Our shabu-shabu meat has the same thickness as sukiyaki meat. You can't do this unless the meat is tender. Because the meat is thick, it has plenty of umami that you can taste in your mouth.
To end the meal, try udon or rice porridge with Kobe beef broth. We also recommend quick grilled shabu-shabu on a hot plate or iron plate.
