About Tatsuya's traceability
welcome!
This is the page that manages the Kobe beef certificate "Kobe Meat Certificate" sold by Tatsuya.
We manage the "Kobe Beef Certificate" issued by the "Kobe Meat Distribution Promotion Association" by lot number.
What is Kobe beef?
All cows from Hyogo Prefecture are tested for bovine spongiform encephalopathy (BSE) before they are delivered to you, and those that pass are sold as Hyogo Prefecture (Tajima Beef) at the market.
Among them, those that pass the grading criteria of the meat quality grade (BMS, which is the ratio of marbling, is 6 or higher) become "Kobe beef".
A stamp called “Nojigiku-han”, which is a proof of Kobe beef, is stamped.
Kobe beef that has passed these strict conditions is given the "Kobe Meat Certificate" as proof.
We have been handling Kobe beef for many years, and we carefully manage the certificates of Kobe beef that we have purchased in the past.
In addition, at our store, we have installed a bronze statue that is placed only at stores designated by the Kobe Beef Distribution Promotion Council that handle Kobe beef.

About lot management of Tatsuya
At Tatsuya, we collectively manage Kobe beef lots.
If we receive a lot of orders, we will run out of meat with just one or two cows.
Therefore, depending on the order volume, multiple cows will be used, so we manage their individual identification numbers collectively.
That is why we have multiple copies of the "Certificate of Kobe Beef" that we send to our customers.
